Hay personas que piensan que los alimentos ecológicos son una estafa.
Creen que llamar a algo “ecológico” o “natural” es una manera de cobrar más por un alimento que es igual a otro pero que se vende por menos dinero.
Nada más lejos de la realidad.
Un alimento ecológico tiene todas sus propiedades químicas intactas y disponibles para ser asimiladas por una persona; de manera que nos aporta las sustancias necesarias para el buen funcionamiento de nuestro organismo, en función del alimento del que se trate.
La agricultura ecológica es un modelo de producción de alimentos saludables.
Sin embargo, un alimento que no es ecológico, también llamado “convencional”, no sólo ha perdido muchas de esas propiedades, sino que además contiene sustancias tóxicas que se acumulan en nuestro cuerpo (y a la larga pueden resultar perjudiciales para la salud) debido al uso de productos químicos tóxicos que han sido utilizados para su cultivo.
La agricultura ecológica es un modelo de producción de alimentos saludables.
Es muy semejante a la agricultura que el ser humano lleva milenios practicando, donde nunca se ha necesitado ningún tipo de sustancia química inventada que haga funcionar a la tierra, porque ésta sabe hacerlo perfectamente sola.
La agricultura ecológica completa esta visión y sabiduría ancestral con las técnicas y los conocimientos científico-tecnológicos más recientes, aplicados desde una perspectiva totalmente concienciada con el mantenimiento, mejora y recuperación del medio ambiente y el ecosistema.
Como resultado surgen ecosistemas agrarios, con gran biodiversidad de especies vegetales y animales, con suelos fértiles, capaces de proporcionar alimentos saludables y de máxima calidad, libres de cualquier residuo químico tóxico de síntesis de laboratorio y exentos de OMG’s (organismos modificados genéticamente, también llamados “transgénicos”, cuyos efectos secundarios en seres humanos no han sido analizados ni sometidos a juicio y que sin embargo forman parte de nuestra alimentación habitual).
¿Por qué hay gente entonces que recela de los productos ecológicos?
Principalmente se debe a dos motivos: falta de conciencia y desinformación.
Es cierto que desde que se viene practicando la producción ecológica en España (años noventa) el número de agricultoras/es que se han sumado a esta práctica no ha dejado de crecer; han ido descubriendo que la agricultura ecológica es la mejor opción en la conservación ambiental y en el cultivo de alimentos sanos y de calidad:
Además, ha aumentado progresivamente el consumo de esos alimentos, motivado, en los últimos años sobre todo, por un cambio de conciencia social en las personas encaminadas hacia un estilo de vida saludable; que son conscientes que la salud tiene como base fundamental una dieta equilibrada provista necesariamente de alimentos libres de sustancias químicas nocivas.
Aun así, en términos generales, el número de consumidoras/es que consume productos ecológicos sigue siendo bajo en relación a la gran cantidad de gente que consume productos convencionales.
Y esto es así, en parte, porque para poder consumir productos ecológicos es necesario saber identificarlos, o al menos, haber sido informada/o de que esos productos existen, cosa que, de manera general, no se ha dado.
Por tanto, es muy importante, para las personas que empiezan a introducirse en el mundo de la agricultura ecológica o el consumo de sus productos, saber que, desde hace años, existe legislación europea, estatal y autonómica para la producción ecológica (ver al final de este artículo); es decir, legalmente, un alimento sólo se puede considerar ecológico cuando ha cumplido toda la normativa existente en materia de producción y almacenaje, y ha superado todos los controles de calidad pertinentes que lo hacen merecedor de esa denominación.
En la Comunidad Valenciana concretamente, el organismo responsable de dicha supervisión y control es el CAECV (Comité d’Agricultura Ecològica de la Comunitat Valenciana).
Junto con esto, es importante saber que, la manifestación del cumplimiento de toda esa legislación y superación de controles son dos sellos informativos, que nos van a ayudar en la identificación de los productos ecológicos:
LEGISLACIÓN EUROPEA Y NACIONAL:
REGLAMENTO (CE) 834/2007 del Consejo sobre producción y etiquetado de los productos ecológicos y por el que se deroga el Reglamento (CEE) 2092/91.
REGLAMENTO (CE) 889/2008 de la Comisión, por el que se establecen disposiciones de aplicación del R(CE) 834/2007 con respecto a la producción ecológica, su etiquetado y control.
REGLAMENTO (CE) 1235/2008 de la Comisión por el que se establecen las disposiciones de aplicación del R(CE) 834/2007 , en lo que se refiere a las importaciones de productos ecológicos procedentes de terceros países.
LEGISLACIÓN AUTONÓMICA:
ORDEN 30/2010, de 3 de agosto de 2010 de la Conselleria de Agricultura, Pesca y Alimentación, por la que se aprueba el texto del Reglamento sobre producción y etiquetado de los productos ecológicos y del Comité d’Agricultura Ecològica de la Comunitat Valenciana (CAECV)”; la cual deroga la Orden de 13 de junio de 1994.
DECRETO 46/2010 de 12 de marzo por el cual se adapta el marco regulador para que los organismos de certificación de producto puedan cumplir la obligación comunitaria de actuar y acreditarse de conformidad con la norma europea UNE EN 45011.
DECRETO 222/2007 de noviembre por el cual se establecen las normas relativas a los consejos Reguladores u Órganos de Gestión de las denominaciones de calidad de la Comunidad Valenciana.
